Chinese Fried Rice Recipe
Ingredients
* 2 oz Chinese barbecued Pork, chopped or cut into 2 inch strips Recipe Here
* 1/2 cup Fresh or frozen peas (if peas are fresh, chill first)
* 1 tsp Salt
* 2 tbsp soy sauce
* 4 tbsp Oil, preferably peanut
* 2 Eggs; lightly beaten
* 2 cup Long-Grain Rice, cooked, preferable day old
* 4 oz Fresh Bean sprouts
Directions
1. Heat wok or a dry skillet, when pan starts smoking, spread peanut oil into pan.
2. Add beaten eggs, cook, stirring constantly. Remove from wok and set aside.
3. Pour off all but 2 tablespoons of oil from the wok.
4. Add rice, pork and peas and stir-fry for about 2 minutes.
5. Pour in soy sauce, stir-fry for another minute.
6. Return the cooked eggs to the wok. Stir-fry just until eggs are re-heated, about 1 minute.
Serves 4
Note: Although freshly cooked rice can be used, day-old rice gives a much better dish. Fresh rice will produce a somewhat sticky, lumpy fried rice.
